This is Actually Good! – Paleo Pizookie

I am trying really hard to be wheat-free.  It would be much easier if wheat wasn’t so deliciously addicting!  Not to mention it usually accompanies my other vice, sugar, and the other, chocolate.  So you can imagine my pure joy at finding this recipe for a pie-like chocolate chip cookie that is gluten-free over at Clean Eating With A Dirty Mind‘s site!  I of course had my doubts, and even told my daughter after tasting the dough that I was going to just pitch it because it tasted so un-cookie like.  My dear girl told me to bake it first, as she had tried some gluten-free recipes that had a horrible tasting dough that turned into lovely baked goods after being cooked.  Low and behold that expensive education payed off, because she was right!  This cookie is good on its own, but if you add whipped cream or ice cream, it is divine.

Paleo Chocolate Chip Pie Cookie

*Yields 1 pie, 4-6 servings

Ingredients:
2 cups almond flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup Mini Chocolate Chips (Enjoy Life are soy free, dairy free)
1 organic cage-free egg
1/3 cup raw honey (melted)
1/4 cup coconut oil (melted)

1/2 teaspoon Almond Extract
1/2 teaspoon vanilla Extract

Directions:

– Preheat oven to 350 F

– Grease your pie tin or plate

– In a large bowl, mix together the almond flour, baking soda, and salt.

– Add the chocolate chips to the dry mixture and combine.

– In a small separate bowl, mix the wet ingredients together, honey, coconut oil, vanilla and almond extract, and egg.

– Stir the wet ingredients into the dry until evenly mixed.

– Let the dough chill in the fridge for at least 30 minutes. Then fill the pie tin or plate evenly with dough. Bake for 30-35 minutes or until a toothpick comes out clean. Garnish with homemade whipped cream and enjoy!
